Even though I am not a vegan, vegetarian or anti-gluten, I love delicious treats and don’t discriminate when it comes to taste. Dana Caruso is a good friend of mine and has a beautiful web site, HeathyChickie.com, where she posts healthy, delicious recipes for dishes that are well-suited for people who may suffer from candida or food allergies. Dana is also a talented and unique voice-over artist.
Here is Dana’s recipe for Banana Raisin Muffins. These muffins are gluten-free, nut-free, refined sugar-free, but does contain egg.
Prep time: 20 minutes
Bake time: 22-25 minutes
Total time: 45 minutes
Yield: 1 Dozen DELICIOUS muffins
2 cups gluten free rolled oats
1 cup tapioca flour
½ cup gluten free oat flour
½ + 1/3 cup milk of your choice (I use hemp milk)
¼ cup butter (I use Earth Balance dairy free)
½ tsp salt
1 tbs baking powder
½ tsp cinnamon
2 ripe bananas
¾ cup chopped raisins
Preheat oven to 350 degrees
First sift the flours and then add oats and sift with a fork. Add the baking powder, salt and cinnamon and continue to sift all dry ingredients until they are well combined.
Next, mash the banana in a separate bowl and then add raisins. The raisins I used were rather large in size so I chopped them up. This step is based on your personal preference.
In a third bowl you will combine the melted butter, milk and egg. Whisk the mixture until the egg is beaten and all is combined.
Now add the bananas and raisin to the dry ingredients. Mix together until all of the dry ingredients are covered with the banana raisin mixture, but don’t overdo it. It should remain a bit chunky. Now pour into the wet ingredient bowl and mix together until evenly covered. Again don’t overdo it otherwise your muffins will have an oatmeal-like consistency.
Next, prep your muffin tray. After inserted, I find it is best to spray the muffin liners with a non-stick spray. Then fill completely with the batter. I filled to pretty much the top of the liner.
Place in middle rack of your oven for 22-25 minutes. Using a cake tester poke the center of the muffins. Remove when tester comes out clean.
I enjoyed them warm, but actually prefer them cold. Easy and delicious!
